Green Juice

Ok I know there are a million green smoothies and juice recipes out there. But, I promise you have not tried the best until you have tried this beautiful and powerful green juice! Packed with vibrant greens, fresh lemon, bananas, mangoes, and more vitamins and nutrients than I can count, not only is this a tremendously healthy little drink, but it’s also so delicious that you’ll actually want to make it a part of your daily routine.

Now I cannot take credit for this recipe. One of my oldest and dearest friends and her wonderful husband have been perfecting this juice over the past few years. She is a physician, mother, homeowner, and a gorgeous person inside and out, so I figure if this smoothie can power her days, then it must be magical.

In my house, I like to make this drink for breakfast or an afternoon snack. I love how hydrating it is and that it helps me work in some veggies at an hour when I otherwise would probably not. Plus because it’s a smoothie, it’s very satisfying on it’s own or paired with some protein if you’re really hungry.

The last and best part of this smoothie is that it keeps well. The fresh lemon really keeps the flavor fresh and prevents browning or bitterness. Because it makes two servings I can blend up a batch and save one smoothie for the next day for myself or for my husband. The kids also love this smoothie, so if you’re hunting for ways to get more green vegetables into your little people, look no further.

Now, I will say that I am generally lazy or pressed for ingredients or both. So, I usually make the most barebones version of this smoothie and leave out all the “optional” ingredients you see below. If you have everything though it’s always best to throw in all the ingredients: it makes for the best tasting and most nutritious smoothie.

Green Juice - Serves 2

Equipment:

  • High Speed Blender (64oz. capacity) with tamper

Ingredients:

  • 12oz. Coconut water or water

  • 1 banana, peeled and sliced

  • 1/2 lemon, quartered

  • 2 cups frozen cubed mango

  • 2 heaping tsp. flax meal (optional)

  • Pinch of salt (optional, but recommended if banana is underripe)

  • Knob of fresh ginger (optional)

  • 2 drops CBD or Copaiba essential oil (optional)

  • 1/3-1/2lb. power greens or a mix of kale and spinach (use as many greens as will fit in your blender!)

Method:

  1. Add all the ingredients to your blender. Be sure to smash down the greens and keep filling as much as you can.

  2. Secure the blender lid tightly and blend on the highest speed for 1-2 minutes. Use the tamper to agitate the mixture to ensure a nice, smooth consistency.

  3. Pour into 2 glasses or mason jars. Enjoy immediately or store the juice covered in the refrigerator for up to a day.
